Sesame Ginger Roasted Wings

Cooking Time: 1 hour

Serving Size: 3 wings tossed in sauce

Ingredients

3 pounds chicken wings (approx. 18 wings)

3 TB baking powder

2 TB chili powder

1 TB kosher salt

¼ cup sesame oil

¾ cup soy sauce, low-sodium

2 tsp ginger, grated

2 TB brown sugar

2 tsp yellow mustard

1 tsp garlic powder

2 tsp cornstarch

1/8 tsp cayenne pepper

¼ cup orange juice concentrate

¼ cup lime juice

garnish sesame seeds

Directions

Heat oven to 400 degrees. Rinse wings well and dab with a paper towel to dry. Meanwhile, blend baking powder, chili powder, and salt. Toss wings in mixture to lightly coat. Place on baking rack on top of baking pan; Roast 30 minutes.

Meanwhile, prepare the sauce by combining the sesame oil, soy sauce, brown sugar, ginger, mustard, garlic, orange/lime juices, and cayenne into a saucepan over medium heat. Simmer 5-8 minutes until slightly thickened. Create a slurry by removing 2 TB liquid and mixing with cornstarch - add back to mixture and allow to thicken the rest of the way.

After 30 minutes have passed, remove the wings from the oven and coat with the glaze thoroughly. You can place them into a bowl, toss with the sauce, and replace them on the rack, if desired. Bake for an additional 15 minutes.

Storage and Turn-out

Serve immediately; garnish with sesame seeds.
