Caramelized Onion, Apple, Blue Cheese Gallette

Preparation Time: approximately 15 minutes

Cooking Time: 45 minutes

Serving Size: 1/8 portion

Ingredients

2 ea Pillsbury pre-made pie dough, rolled

2 TB olive oil

1 ea red onion, halved and sliced thin

3 ea apples, sliced (use Cortland or Granny Smith)

¼ cup blue cheese, crumbled

TT salt and pepper

Directions

Preheat oven to 350 degrees. Heat skillet with olive oil over medium low heat. Add onions and stir to coat with oil. Cover and allow to steam about 8-10 minutes, stirring occasionally. Uncover and sauté 5 minutes. Season with salt and pepper.

Meanwhile, lay one pie crust in pie pan/tin. Roll the other crust out and, using a pizza cutter, cut into ½" wide strips. This will be used to make lattice-work on top.

Remove onions from heat and add inside pie crust. Fan apples in circular formation on top of the onions, then top with blue cheese. Fold the edges of the pie crust inward on top of the mixture. Begin making lattice-work out of the strips from the second pie crust.

Brush with olive oil. Bake, covered, 15 minutes. Uncover and continue baking until golden brown.

Storage and Turn-out

Serve warm. Great as a breakfast or brunch dish.

Allow to cool before storage. Will keep for 3 days.
