Tempeh Sloppy Joes

Cooking Time: 25 minutes

Serving Size: ½ cup mixture, Makes approximately 4 servings

Ingredients

8 oz Tempeh - recommend LiteLife brand

15oz tomato sauce, no salt added

2 TB olive oil

1 each onion, small diced

1 each green bell pepper, small diced

2 cloves garlic, chopped

1 tsp chili powder

1 tsp cumin, ground

3 TB brown sugar, packed

2 tsp soy sauce, low sodium

1 tsp Worcestershire sauce (non-fish containing brands are available)

1 tsp cayenne pepper

4 each Whole Wheat Buns (2 "Slices" per roll)

Directions

Heat olive oil on medium high. Using hands, crumble Tempeh into the pan and sauté until golden brown.

Add chopped onion and garlic - sauté until translucent. Add chili powder, cumin, cayenne, and brown sugar. Continue cooking for 5 minutes until well combined.

Add tomato sauce, Worcestershire, and soy sauce over mixture and allow to simmer on low heat for 10 minutes until sauce thickens.

Storage and Turn-Out
