Spicy Roasted Tofu
Cooking Time: 15-20 minutes
Serving Size: approx. ½ cup (makes 4)
1 lb. extra firm tofu, pressed and diced into ½" cubes
2 TB olive oil
2 TB garlic, minced
1 tsp. Cajun spice blend
½ tsp. cayenne pepper
pinch black pepper
1 TB sesame oil
1 TB soy sauce, low-sodium
Preheat oven to 400 degrees. Toss together ingredients and allow to marinate 20 minutes.
Give the mixture another toss and spread out on non-greased baking sheet in one layer. Bake 15-20 minutes, rotating often, so all sides have caramelized and are golden brown.
Storage and Turn-out
Enjoy chilled over a salad or served hot with saffron rice and roasted vegetables!
